Nothing NEW, just Buffalo Chicken & BBQ Pulled Pork

 This weeks post doesn't come baring a new recipe. By request, from my boyfriend, this weekend was spent making his two favorites from my preexisting recipes so that "he could pack lunch this week with yummy food instead of PB&J's." So this week I made both buffalo chicken dip and BBQ pulled pork for the second time (I've made the buffalo chicken dip every other week since I first made it). Though my boyfriend did say that my pork was even better then it was the first time, so I guess that is a good thing. 

This weeks reading talked a lot about storytelling and the purpose it can have within the field of occupational therapy and how therapist approach and treat their clients during sessions. I have talked a lot about my reasoning for choosing my new occupation and how it relates to my life prior to the MOT program at ISU. But, I'll explain it again, and maybe more in depth.  

Growing up I immersed myself in athletics, it was my happy place and was where I found the most peace in my life, during that time. My interest in finding "MY SPORT" lead to experimentation with multiple sport including: basketball, golf, tennis, field hockey, soccer, and softball. And, I was successful when I started when I first stepped onto the softball field, I knew that it was the sport that would bring me the most joy, so I started playing competitively. This then lead to a rigorous practice schedule on top of my already demanding honors classes course load. I practiced for 4 hours 4 times a week and had games every weekend, all day Saturday and until you lose on Sundays. This being said I went from school to practice most days and really lived off of WAWA (a chain connivence store on the east coast) sandwiches, salads, and chicken nuggets. Not leaving many days to learn how to cook for myself or really eat home cooked meals at all. So, as I progressed in softball and life, I began being recruited by college coaches to play D2 softball. I eventually signed to Nyack college and played there for 5 years, while using my meal plan and taking advantage of the Wendy's 4 for $4 deal as much as possible. Thus, again, not cooking for myself. That brings us to present day. So up until this point, I have never really spent much time in the kitchen, and thats why I decided to choose crock pot cooking as my new occupation. I felt that this occupation would allow me to gain a base line of confidence in the kitchen while also not spending large amounts of time prepping the meals. It's what I call "work life balance." I can still do my school work while cooking which I think is incredibly important. So in the end, the main reasons I chose my new occupations includes: gateway to cooking, building my confidence slowly, and it still allows me to do my homework without taking up to much time prepping.

  1. Hi Erin, this is Melanie Shaw! I love that you picked crock pot cooking as your occupation. I have a crockpot at home, but the most I usually use it for is baked potatoes and one type of soup, so your blog is a great source of ideas for branching out. I moved out for the first time when I came to grad school, so I've had a similar occupation in learning to meal-prep for myself, even if it wasn't my chosen occupation for this class. If you ever want a really good soup recipe, I highly recommend Pioneer Woman's Chicken and dumplings recipe on her website. The chicken is browned slightly in a pan before being put in a crock pot, but most of it is very crock-pot friendly, and it's fairly low-effort if you buy pre-cut vegetables. Thanks for sharing!

      Its so awesome to have someone who also is in the same position as me! I have learned to really enjoy cooking in my crock pot and have learned that it is so easy and can provide for a couple days which makes it even better. Another added benefit of crock pot cooking is that I can do my homework while its cooking! I will definitely try the other recipe for the dumpling soup! iT sounds delicious and with the cold weather coming it will be nice to have something warm to snack on!
