Ranch Pasta

After last weeks success I gained more confidence with chicken and have confirmed that the issue within my first meal was that I used pre-diced chicken rather then full chicken breast. I think it is important to celebrate the little victories and teaching/learning moments because they occur more often than bigger events. By taking this new knowledge I again cooked a meal involving chicken and again it was a really good meal that will be lunch for the remainder of the week.  Cooking chicken again was at my boyfriends request... if you cant tell he LOVES chicken. But I am happy that he was willing and excited to try this meal and go on this journey with me. 

This weeks reading was an article that allowed me to gain a deeper understanding of spirituality within the field of occupational therapy. It gave insight into how having an occupation may enrich an individuals spiritual life, and vice versa. This knowledge allows occupational therapist to treat the entire person rather than just parts of the individual that are disabled. Having spirituality within the concept of occupation allows for greater attachment and discovery of ones true self. Thus proving its importance with the field of occupational therapy. I believe  that people can connect spiritually even if they do not agree on many controversial topic, thus allowing for a greater client - therapist relationship which will only better the outcome of sessions. I do believe that spirituality should be in the OTPF. I think this is a key factor in distinguishing occupational therapists from others in closely related fields. I think treating all aspects of a person and using holistic approaches will allow for better results as well as happier  and more willing clients.  

 In the past I was most spiritual with the athletic aspect of my life, at practice and in games was the place I found the most peace. But now that I am a retired college athlete I have to find and conjure that peace from somewhere else. This assignment has forced me to find a new form of peace and has allowed me to find something else I enjoy doing... That I wasn't even aware of. This week really allowed me to connect with the reading for the first time in this assignment. I was able to really enjoy cooking and felt truly peaceful for the first time since I was last on the field. This not only allowed me to find greater appreciation for my new occupation, but it also allowed me to enjoy it with someone else, who was equally excited about it. My boyfriend has been a huge supporter through this learning experience and is always making suggestions on what I should make next and other things I can substitute for ingredients I don't particularly like 


 Recipe: 

Ingredients: 

  • Chicken 
  • 1 Cup of your favorite salsa 
  • 1 Dry Ranch Packet 
  • 1/2 Cup of Sour Cream 
  • 1 Can of Cream of Chowder Soup
  • Rotini Pasta 
Cooking Instructions: 
  • Place Chicken in Crock Pot
  • Mix soup and salsa then pour over chicken and cook on low for 6 hours or on high for 4 hours.
  • Cook Pasta and drain. 
  • Remove the chicken from the crock pot. Pull apart with two forks and place to the side.
  • Add ranch and sour cream to the crock pot and mix 
  • Add chicken and pasta back to the crock pot and mix.
  • ENJOY!
